You could revert each change individually. Granted if people made non-atomic commits, then you're reverting unrelated stuff. Either way it's not super trivially easy, but hey, nothing ever is, right?

The real issue from my perspective is, Hygiene and Moodlets would be acceptable on a server like paradise or Aurora. But not here. So, I'm honestly just wondering if Qustinnus knows which server he's coding for
And even better, what are his reasons for coding these things

It's funny how I know that and I'm not even a coder, which makes me think qustinnus is just messing with us when he pretends hygiene can be configed out

Honestly I've not had any problems with hygiene since the latest update, it just forces you to not walk around covered in blood (which ruins my epic miner character)

I don't have a problem with hygiene as it currently stands. I can spend all shift with bloody shoes and maybe have to shower a hour into the round, but if you get blood on your body it doesn't take too long before the stench comes. It means messy jobs like Miner/Cook might want to bathe more often while regular crew members just bathe as the situation demands. I'm kind of indifferent about it as a feature. I don't think it deserves the hate it gets in it's current state but I won't feel too bad if you decided to ditch it. I like people using showers and moving around a bit more I guess and more mechanics involving miasma are kind of neat. I'm happy enough to give it a shot like moodlets.

Currently attacking in melee drastically drains your hygiene for every hit so any kind of fighting is more or less guaranteed to get you dirty very quickly
I'd either remove or greatly reduce it and increase the drain from having bloody clothes (if necessary) so that the drain mostly comes from neglecting to get rid of bloody clothes instead of instantly getting dirty just from being caught in a fight

I have another issue with hygiene
It keeps calling me a dumbass whenever I don't take off all of my clothes in the shower. Like wtf, I'm making myself vulnerable and I'm also getting bad moodlets?
Very painful.

There was a PR by Qustinnus to remove the debuff but I guess it didn't take.
I understand not getting mood buffs or removing the stank overlay for clothed showering, but there's still other reasons to use the safety showers and the debuff is terrible. It's even worse now because it's not clear what counts as clothing (showering with shoes is fine but not welding helmets ¯\_(ツ)_/¯).
The mood system is only immersive when it links with the player. When you lose an arm, you are upset because it's harder to work with just one arm, and the debuff reflects that. When you constantly slip, you're upset with the constant interruptions (or worse) and the mood debuff reflects that too. But when you use a shower to put out a fire, you're generally happy, or at least a bit relieved for having that particular issue gone, and the debuff that you feel stupid, like you should have kept burning is a disconnect.

Honestly, I think the real problem with Hygiene is that like mood, it literally used code to try and enforce new rules upon players.
If you want people to worry about dirty clothes, have the headmins make space-law enforced again. Now shitcurity is looking for any suspicious behavior like that.
Leave the rules to the rules, please. That's how it's been done everywhere else.
