Eat as much as you like, you will never get fat. Mint toxin is useless. No one has fixed this because being fat is annoying.

As I mentioned in OOC at the time I don't think its impossible, I've talked more than one person through these mechanics before and mostly had to code dive. I think it basically only fattens off nutriment and most food contains a bunch of other stuff. Optimising food choices has worked for players in the past. I also suspect you can just drink endless nutriment (or eat it in pill form) that you could extract from ground food.

Could be wrong, but had success (wall of gluttony being the objective) pushing people down these routes before without having to resort to anything dramatic.

You either need to drink nutriment/sugar/cooking oil, or inject it directly into your veins. Probably has to do with the stomach changes.

Getting fat was a huge pain in the ass anyway that served no interesting purpose after Carn removed fat sprites.
