Missiles have really high speeds in straight lines. They're not very good at maneuvering though, the only have these tiny little stabilizers on them to direct air and provide lift. You can't outrun a missile but you can out-turn one. They counter this by having a predicative ability, they don't aim for where you are, they look at where you're going based on your radar telemetry and they try to cut you off.
Knowing is really all of the battle, then. Knowing you've been locked up, knowing you've been fired on, knowing the direction the missile is coming from. If you have all this information you can easily turn in a way a missile wont be able to change its course to meet.
...which is why it's common to fire one missile, and then a second one before the first has even been avoided. You dodge the first bullet to be caught unaware by the second. Or you just can't get out of the way of both even if you do know.
...or you be a sneaky bastard with your FLIR system and long-range infrared seekers that never show up on Radar and need to be visually identified (or you have such cutting edge radar that it can detect something as small as a missile in flight and alert you to its presence).
...or you just get into the knife fight and use close-range infrared missiles that go up the other guy's ass before he can do jackshit about it.
