Thinking about it, Serial Experiments Lain may be one of those edgy things. I mean, I really like it, but it's one of those shows about questioning reality to the point where some scenes are more about conveying an impression than an idea, if that makes sense. I still think it does it very well and is an interesting experience, but it's probably the least "accessible" thing of the bunch.
Planetes is great in that it's probably the most realistic representation of space travel of anything I've seen across all fiction, and it's got a nice plot to boot. I love the flow of GitS, the setting, and again the realism in the combat. It's not all flashy moves and super lucky main characters, but gritty combat that flows from the cool tech where things actually get blown apart with consequences. The music helps, too; not overdramatic or out of place. I saw the films before the series, so you could try that to dive in.
As for Champloo, Mugen's not my favorite character either, but the series has a lot more to offer. O' course, there are a lot of anime that I love that have characters that I absolutely hate (Feiris in Stein's;Gate, Asuka in Evangelion) but in the end make it work.
