unfortunately as soon as you move into attack range the highly acidic gelatinous creature uses its reaction to immediately move onto your space and uses its engulf attack please roll a dc 20 dexterity save to escape the pleeb or take 6d6 acid damage

that's not how reactions work, you can only get this with polearm master and a two handed weapon.

You should make it a lair action instead.

Lair actions are at a fixed initiative I think u're thinking of Legendary Actions which can happen at the end of any other characters turn.
