The mech DNA lock is rather lame. If someone leaves his mech unattended it shouldn't be protected by some snowflake DNA lock, someone with the required Id access should be able to enter it.

Only if you make it so you can feasibly and consistently remove somebody from a mech
The real mech lock is to just never leave the mech so if somebody hops in yours and steals it you're SoL

Just make it hackable with multitool. Or so you could use dna from an item of the owner.

you definitely need a way to remove someone from a mech if they're standing still.
dna locks being unable to be bypassed is also dumb.

Maybe make someone removable after the mech has a certain amount of damage?

You can destroy the mech, that would remove the person from the mech
But honestly, given how abusable melee combat is I don't think this would end well..
You can still be stunned with a flashbang in a mech. So mech stealing would be pretty easy.

Also, what if you could bypass a DNA lock using the owner's blood in a syringe or something?

Change it to ID lock, or have something with that persons DNA on it to open the cockpit.

Use genetics to steal their identity.
