after the freeze there might be something that will make instruments support even more complex music but nothing is confirmed and this is unlikely.

In order to get something decent you'll need to start with a good MIDI file, I've had a brief look and only found one for the Baldur's Gate theme, which is an adaptation for guitar and recorder. It seems to me that it would be tricky to do justice to something that epic. The file was simple enough as is so I've converted it; you kind of get your wish, but prepare to be underwhelmed:
Baldur's Gate Opening Theme (Adaptation for guitar and recorder)
Here's "Safe in Beregost" by way of commiseration, it's marginally more recognisable:

I've tried a few tunes out on the new conversion utility, I'll dump the fraction that came out intelligible here for now, in roughly decreasing quality. Most haven't been properly tested in-game, I've been putting them into BS12Piano.dmb to save time.
Aphex Twin: Avril 14th (props to Gouty for recognising this)
(Traditional) Sloop John B (repeat)
Procol Harum: A Whiter Shade of Pale (repeat) (No mime's funeral would be complete without this)
The Beatles: Nowhere Man

Well, found a MP3 of the main theme and converted it to a Midi....whyyyyyyy. WHY GOD WHY

Welp, it was broken when I did it. Also, currently trying to get it to sound....right with AmazingMIDI, after I converted the mp3 file to a wav file so I can convert it to a midi file now with this program...and trying to get it to sound right is a pain...
