obs can have isolate audio from a window , i use it when i want to record the game

Depends on the situation. If I'm in the cargo bay moving stuff or cleaning floors as a janitor, then yes. If the station is going to hell or the admin is playing appropriate music, then no.

For example - 1 track for a microphone, 1 track for gameplay, and 1 track for background things (browser windows, discord, etc).

Plenty of tutorials on youtube explaining how, it's a little complex but when it's done you can pretty much ignore it entirely.
