the miners fished for shit
they could get custom baits to apply odd effects to the fish
they could bring in all kinds of weird fish
the chef cut it up with a knife to harvest basic stuff and processed it for the bonus loot that you could give to other departments

To be honest, I think seven fish is about right. You don't want too many or most of them will prove useless and just add unnecessary fluff. Mining, for example, works pretty well with only one generic 'metal' and just a few other ores, though I have seen calls to change that.
So, a few considerations. The big one is whether the fish are in an earthlike environment. Are we talking about normal sort of water that you're diving into? You mentioned taking fish back, does that mean you could have standard type aquariums? That sounds awesome, I just want to be sure I understand. Also, the asteroid is a vacuum, so you'll need to make sense of that, or just have fisheries on station (but you seem to be keen on the 'hunter' idea, not just farming), so how's your mapping?
What the fish do I think you can play quite safely. You can make them give out varying amounts of meat (even a generic 'fish meat') would work and if you want a unique property to each one you can give them an organ that comes when you gut them with a knife. For the mime fish it might be a toxin gland that can be processed into perfluorodecalin (the mute toxin), for the clown maybe a rubbery organ you could cook into a bike horn (there's no established way to make those yet, is there?).
Salmon and bass I think are fine as meat fish, but in theory you could stuff them to make things like the 'Billy Bass' wall mount. Bit of an effort to code, but it's the only use I can think of.
A fish with particularly tough skin could be used to make armour, like with sharkskin currently. Or just styling gloves, I dunno.
Oh, and it ought to be possible to extract venom from the jellyfish (sorry, uhh, tanglefish) and the red and black (or was it red and yellow?) one.
Assuming you're prepared to code all this, which you seem enthusiastic about. You asked for ideas, so you here you go. Overall I'd say don't make it way too complicated, give it meaningful gameplay considerations, make it look good. I would be very happy to have a fish in my office, for example. Maybe even feed them, Mass Effect style.

Heads up, perfluorodecalin is actually distinct from the mute toxin (which is literally called mute toxin, and doesn't reduce oxyloss the same way perfluorodecalin does).
I think it'd make most sense for them to be space swimming fish like our current carp, and to have the aquariums on station be vacuum aquariums.
I like the idea of specific organs, but I feel like the products of fishing should either be more unified in effect if there's only going to be a few of them, or there should be shit tonnes ala botany with specific benefits from each.
Although in saying that I realised it might be frustrating having to search for the specific type of fish you want to hunt amongst the rest so I don't know!
